Whether for a quick lunch or a satisfying dinner, this sandwich is easy to make and packed with bold, creamy, and savory flavors.

Ingredients

Scale

For the Chicken Caesar Salad Filling:

  • 2 cups cooked chicken (grilled, poached, or rotisserie), shredded or chopped
  • ¼ cup Caesar dressing (store-bought or homemade)
  • ¼ cup grated Parmesan cheese
  • ½ cup chopped romaine lettuce
  • ½ teaspoon black pepper (to taste)
  • ½ teaspoon lemon juice (optional, for brightness)
  • ¼ cup crushed croutons (optional, for extra crunch)

For Assembling the Sandwich:

  • 4 slices of ciabatta, sourdough, or whole wheat bread (or 2 sandwich rolls)
  • 1 tablespoon butter or olive oil (for toasting bread)
  • Extra Caesar dressing for spreading (optional)
  • Extra Parmesan cheese (optional)
  • 2 slices of crispy bacon (optional, for added crunch)
  • ½ avocado, sliced (optional, for creaminess)

Instructions

Step 1: Prepare the Chicken

  1. If using grilled chicken: Season with salt, pepper, and garlic powder, then grill over medium heat for 6–7 minutes per side. Let it rest before slicing or shredding.
  2. If using poached chicken: Simmer in chicken broth or water for 12–15 minutes until fully cooked. Let cool and shred.
  3. If using rotisserie chicken: Simply shred and remove the skin if preferred.

Step 2: Make the Caesar Salad Filling

  1. In a large mixing bowl, combine the shredded chicken, Caesar dressing, Parmesan cheese, chopped romaine lettuce, and black pepper.
  2. Stir gently until the ingredients are well combined.
  3. Add optional lemon juice for brightness and crushed croutons for crunch.
  4. Set aside.

Step 3: Toast the Bread

  1. Heat a pan over medium heat and spread butter or olive oil on one side of each bread slice.
  2. Toast until golden brown and slightly crispy.

Step 4: Assemble the Sandwich

  1. Spread a thin layer of Caesar dressing on the toasted bread.
  2. Add the chicken Caesar filling, then top with extra Parmesan cheese and romaine lettuce for crunch.
  3. Optional: Add crispy bacon and sliced avocado for extra texture and flavor.
  4. Close the sandwich, slice in half, and serve immediately.

Notes

  • Bread Choices: Ciabatta, sourdough, whole wheat, or brioche work best. For a low-carb option, use lettuce wraps instead of bread.
  • Dressing Variations: Try a Greek yogurt-based Caesar dressing for a lighter option or a vegan Caesar dressing for a dairy-free version.
  • Make-Ahead Tips: Prepare the chicken Caesar filling in advance and store it separately from the bread to prevent sogginess.

  • Serving Suggestions: Pair this sandwich with sweet potato fries, coleslaw, or tomato soup for a complete meal.
