Ingredients

Scale

Essential Ingredients:

  • 1 cup Kodiak Cakes Buttermilk Power Cakes Mix
  • 2 ripe bananas, mashed
  • 1 large egg
  • ½ cup milk (regular, almond, or oat milk)
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking powder

Optional Add-Ins:

  • ½ cup chocolate chips (for sweetness)
  • ¼ cup chopped nuts (walnuts, almonds, or pecans for crunch)
  • ½ teaspoon cinnamon or nutmeg (for warm spice)
  • 2 tablespoons Greek yogurt (for extra moisture)
  • 1 tablespoon peanut butter or almond butter (for extra protein)

Instructions

Step 1: Prepare the Oven and Muffin Tin

  • Preheat oven to 350°F (175°C).
  • Line a 12-cup muffin tin with cupcake liners or grease with cooking spray.

Step 2: Mash the Bananas

  • In a large mixing bowl, mash two ripe bananas with a fork until smooth.

Step 3: Mix the Wet Ingredients

  • To the mashed bananas, add:
    • 1 egg
    • ½ cup milk
    • ¼ cup honey or maple syrup
    • 1 teaspoon vanilla extract
  • Whisk until well combined.

Step 4: Add the Dry Ingredients

  • Slowly stir in:
    • 1 cup Kodiak Cakes Buttermilk Mix
    • ½ teaspoon baking powder
  • Gently mix until just combined (do not overmix to avoid dense muffins).

Step 5: Fold in Optional Ingredients

  • If using chocolate chips, chopped nuts, or cinnamon, gently fold them in.

Step 6: Fill the Muffin Cups

  • Spoon batter evenly into muffin tin, filling each about ¾ full.

Step 7: Bake the Muffins

  • Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.

Step 8: Cool and Enjoy

  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  • Enjoy fresh, or store for later!

Notes

  • Use overripe bananas for maximum natural sweetness.
  • Do not overmix the batter—this keeps the muffins light and fluffy.
  • To store: Keep muffins in an airtight container for 2 days at room temperature, 1 week in the fridge, or up to 3 months in the freezer.
  • Reheat in the microwave for 15-20 seconds for a warm, fresh-baked taste.

  • To increase protein, add Greek yogurt, protein powder, or nut butter.
